Instead of creating a large mixed floral centerpiece or two, find some mismatched mason jars or vases and create a dramatic look with a single type of bloom in each jar.  Invest in a few great serving pieces.  Vintage shops and flea markets are a great place to find one of a kind pieces filled with character.
